"i love you, i really do" - if you were to nod in this situation, it would make sense and it would flow naturally - try doing it while shaking your head and it feels odd. another example would be "i didn't drop it, it wasn't me" and you're shaking your head.. it makes sense, if you're nodding it would just feel odd.
